Stephanie O’Farrell from AllMomDoes is talking all things Thanksgiving with me today, and it’s making me H-U-N-G-R-Y. She and her husband decided to cook everything themselves this year, and wanted to do a test run to figure out quantities and test new recipes… and it turned out to be a HUGE success.

Stephanie:
Yes, you too!
Erica:
Okay, you got to share what you did this weekend.
Stephanie:
I did a test run for Thanksgiving, which I do know is more than a month away.
Erica:
Okay. See, this is what I mean. You get a gold start. What inspired you to do this?
Stephanie:
So, we have hosted for about eight years now, so nothing new there except for this year, my wonderful husband decided we should cook everything. Instead of asking people to bring, could you bring the rolls? Could you bring the green beans? And I for some reason said, sure honey. Sounds great!
Erica:
Now that is just super nice of him. Why did he want to do that?
Stephanie:
He loves hosting and I think he’s just like, we got this. We recently had a kitchen remodel, so we’re really excited about our more open space and I think he’s like, I just want to do it and just be the best host.
Erica:
I love it. I love it so much.
Stephanie:
Yeah. So I said, fine, and then about a week ago I thought, oh my gosh, I’ve never even made the mashed potatoes for 20 people. How many do I even make?
Erica:
That’s so funny.
Stephanie:
So that led to, hey, I better do a test run so that I know what I’m getting into and how much planning I’m going to need.
Erica:
And how did it go?
Stephanie:
It went better than I would’ve thought, actually, which was very exciting. I now know exactly how many potatoes to make. I made four and a half pounds of mashed potatoes.
Erica:
Wow. What kind of potato do you use, by the way?
Stephanie:
Okay, you got to go, in my opinion, Yukon Gold.
Erica:
Yes, me too. That’s what I used.
Stephanie:
Yes, yes. That’s what we did. And it went well. I did a new corn casserole recipe. I’d never made stuffing. We always do the turkey and a few things, but I made a focaccia bread. I mean, I did the whole thing. So, we’re going to be eating mashed potatoes for weeks. We’re going to be sick of it by Thanksgiving, but it went very well and it made me so excited, now, for the holidays.
Erica:
I get the impression too, from your story that you actually had fun. So, I’m imagining that your husband was in the kitchen with you because I’ll tell you, at our house, Thanksgiving is a tag team effort.
Stephanie:
Yeah. He was right beside me the whole time we did it all together.
Erica:
I just think this is wonderful. You’re making me want to do it just because I want to eat sweet potatoes with marshmallows twice in the Fall. I mean, that’s a good plan.
Stephanie:
It is a good plan. And do it now because then you won’t be sick of it. You still got time before Thanksgiving. That’s why I did it now so that I’ll want to eat it again on Thanksgiving.
Erica:
I think you’re a genius. And I have to ask you this too. What did your relatives and your friends say when you said You’re not bringing anything? Just come.
Stephanie:
They said, great. What time should we come?
Erica:
